In summer, I try having everything chilled and fresh! I don’t feel like having my regular food as it looks alien to me! Raitas are refreshing part of indian cuisine. They are simple and healthy yet tastes great!
The raita is pretty easy and quick. It goes great with simple pilaf or regular rotis. You can add some pomegranate juice for sweetness instead of sugar. Try it for quick summer lunch!
Serves two persons
1 cup spinach
1 1/4 cup yogurt (low fat yogurt will do)
1/2 tsp sugar
1/4 tsp pepper
1 garlic (grated) or dash of garlic paste
pinch of red chilly powder or chilly flakes
1/2 tsp cumin powder
3/4 tsp chat masala
- Boil two cups of water and put off the heat. In this water add spinach leaves and keep it immersed in it for 1-2 minutes. Remove the spinach and put in cold water. After a minute , remove the spinach, squeeze out excess water from it and chop it.
- Take yogurt in a bowl. Add salt ,pepper,chilly powder,sugar, cumin powder and chat masala. Mix the yogurt for a minute to form smooth mixture.
- Add chopped spinach and mix it. Refrigerate it for 10-15 minutes. Serve it chilled.
Serve it with pilaf or simple biryani. It goes well with parathas or hot rotis!
