Summer is here and so is mango and salads! Simple salads always appeals me. This one is my latest favourite.
I have used very simple dressing. I recently watched an episode of cookery show Love bites with Joey by Joey Mathews. She marinated raw onion rings with salt, lemon juice and pepper which leaves onion with mild flavour than normal. I loved it. I used it in this salad. I may use onions in this way in other salads too!
Serves 2 persons
3/4 cup cooked and diced sweet potato
1/2 cup sliced raw mango
1 tomato (sliced)
1 onion(thinly sliced)
handful of mint leaves
2 tbsp chopped coriander leaves
1 tsp lemon juice
crushed black pepper
1 tbsp extra virgin olive oil
1/2 tsp red chilly powder (kashmiri)
onion juice *(see step 1 of procedure)
- In a bowl, mix sliced onions, salt ,pepper, lemon juice and mint leaves. Mix it with fingers and keep aside for 25-30 minutes(marination). Now, squeeze the onion rings and mint leaves and put in salad. Use the juice in the bowl in dressing.
- For dressing,in a bowl, mix olive oil, salt, pepper, onion juice (from above step) and chilly powder.
- In a big salad bowl, put tomato, raw mango, coriander, onion and mint( marinated ones) and sweet potato. Add dressing and toss it. Serve immediately.
