This simple dish mostly served as side- dish is one of my favorites. Sorry for getting one more spinach recipe. I just can’t have enough of spinach. But this one is super easy and super quick and did I say super tasty too!

Stuffed tomato (with spinach ,potato topped with cheddar)

Serves 4 stuffed tomatoes

Ingredients

4 medium sized red tomatoes

1 1/2 cup chopped spinach

1 small potato(boiled)

1/2 cup breadcrums

7-8 garlic cloves (chopped)

1/2 tsp chilly powder

1/2 tsp pepper

1 tsp chat masala

salt

1 tsp fennel seeds(saunf)

1 tsp cumin seeds

1 tbsp oil

3 tbsp cheddar cheese

Procedure

  • Cut the top of tomatoes and scoop out the seeds with the help of spoon. If the tomatoes don’t stand on their own, cut the small piece at the bottom so that they can stand.
  • For stuffing, heat oil in a pan. Add cumin and fennel seeds. Saute it and add chopped garlic. Add chopped spinach and saute it for next 2 minutes. Add salt, pepper, chilly powder and chat masala. Mix it and add potato and breadcrums. Mix well. Put off heat.

  • Stuff the spinach filling in the tomatoes. Press at the top of tomatoes. Top it with cheddar cheese. Bake them at 200 deg for 7-8 minutes or till tomatoes are just soft.

Serve them hot.
