I have across very few people who actually like bottle gourd (known as lauki in Hindi). Lauki aids the weight loss. Weight- watchers have its juice in morning on empty stomach. Lauki provides lots of fibre, essential minerals and iron. It aids digestion process and is very low in calories!
If you are bored of having lauki curry, it is time to just change the way you eat lauki. The chutney is interestingly tasty. Serve it along with parathas, chillas , idlis or even as dip. You can even add pine nuts or peanuts or some roasted sesame seeds for the nutty flavour!
250 gm bottle gourd (cut in small pieces)
5-6 green chillies
8-9 garlic cloves
1 tbsp cumin seeds
1 tbsp tamarind pulp
1 tbsp jaggery
2 tbsp sesame seeds
1 tbsp oil
- In a non-stick pan, heat oil. Fry the green chillies for 2-3 minutes. The chillies may splutter to your face so close the lid. Keep the chillies aside. In same oil, fry the garlic till golden brown and keep aside. Add the bottle gourd pieces and fry them till soft and brown. Keep them aside.
- Now in the same pan add cumin seeds and put off the heat. Now everything in pan along with cumin seeds and oil ,put in blender. Add fried chillies, garlic and bottle gourd. Blend it along with tamarind pulp, jaggery and salt.
- Garnish with fresh mint leaves and sesame seeds.
Serve it with chillas, parathas, or steamed rice.
