My mum’s recipes are heaven on the earth. One such recipe ,straight from her kitchen is red chilly, fenugreek seeds and garlic tempered dal. Yes, dal is first tempered and then cooked along with tempering. It is full of flavour and is spicy. What do I say! My mum is the best!

Ingredients

1 cup pigeon pea (tuvar dal)

6-7 dry red chillies

10-12 garlic cloves

1 tbsp fenugreek seeds

1 lemon sized tamarind

1 tsp mustard seeds, 1 tsp cumin seeds

pinch of asafoetida

1 onion (sliced)

1 tomato (cut in cubes)

1/2 tsp turmeric powder

11/2 tbsp oil

salt

  • Soak lentils(dal) in excess water for 30 minutes

  • Break the whole red chillies in small pieces.

  • I use pressure cooker for any lentil dish. So heat oil in pressure cooker. The heat should be at minimum. Add whole garlic first. Allow it fry till they are golden brown. Add mustard seeds and allow them to splutter (This is important, do not add anything until mustard seeds splutter- Mum’s tip)

  • Then add cumin seeds, fenugreek seeds and dry red chillies. Do not burn any spices (My mum never burns anything). Add sliced onions and asafoetida. Fry for a minute on minimum heat. Then add turmeric powder and soaked lentils. Mix it. Add two cups of water and tomatoes. (water may vary according to lentils. So add a half cup more when you are not sure)

  • Mix well. Allow it to boil and add tamarind. Close the lid and allow it to cook for 6-8 whitles. (Because of tamarind, lentils will take more time to cook- Mum’s tip)

  • Let the pressure cooker to cool down so that  you allow the pressure to release by itself. Remove the lid and add salt and mash it thorouhly. Mix well. Serve it hot with steamed rice. ( Salt does not allow lentils to cook properly so add after they are cooked- Mum’s tip)
