Sago or sabudana has pearly texture. It is widely used in form of flour. It is starchy and is high on carbohydrates and low on fat and protein and lowest in cholesterol. So, it is often mixed with fruits or milk. It has cooling effect on body. And for this reason it is used in many ayurvedic medicines and eaten during fasts.
Serves 2 persons
1 bowl of sago(sabudana)
1 medium sized boiled potato(cut into big pieces)
1 small cup roasted peanuts(groundnuts)
2 green chillies(chopped)
3-4 curry leaves
1 tsp lemon juice
1 tbsp chopped coriander
water for soaking
1 tsp cumin seeds
1 tbsp sunflower oil
- Soak sago in excess water for 5-6 hrs or overnight. Coarsely grind the peanuts.Drain excess water in sago completely.Sago should be just moist.
- Heat oil in nonstick pan. Put cumin, curry leaves and chilies. Saute for a minute. Add potatoes. Mix gently. Cook for a minute. Add sago and salt.Mix it.
- Add peanuts. Mix it properly and saute it 3-4 minutes or till sago becomes translucent.
- Put off heat. Add lime juice and coriander. Serve hot with a cup of yogurt.
