Easy ,stomach filling ,healthy and tasty food! That’s it! That what everyone wants. Then why there is so much fuss over food. Because same food may be boring ! Little changes in food leaves us with refreshing feeling. I love corn soup since childhood. I just added oats powder instead corn-flour with a dash of mint leaves. I just loved it. Flavour is awesome! Try it for its sheer simplicity!
Serves 2 persons
1 cup sweet corn kernels(boiled and chopped finely)
3-4 tbsp (whole) sweetcorn kernels
1/2 cup oats powder
10-12 mint leaves
1 green chilly (chopped)
1 small onion(chopped)
1 tbsp chopped coriander or parsely
1 tsp butter, 1 tsp olive oil
2 cups vegetable stock
- Heat oil and butter in a sauce pan. Add onion, chillies, garlic and mint leaves. Saute for around 2 minutes. Now add finely chopped sweet corn and chopped coriander and 2 bowls of vegetable stock. Add salt and pepper and simmer for 5 minutes.
- Make the paste like mixture of oats powder and vegetable stock.
- Now add oats mixture slowly in pan with stirring continously. Adjust more stock if you feel it is thick.
Tip: Add boiled cabbage and cauliflower for making it low-carb!
