Papdi chaat (popular indian savoury snack)

For papdi

(I know it is a long process, so i often buy them off)

Mix all the papdi ingredients and prepare dough with minimum water. Dont knead the dough.Roll out small biscuit size papdis which should be thick enough to get a crunch. Take knife and poke on them 4-5 times so that they don’t become fluffy when they are deep fried. Deep fry on low heat.

For green chutney

Grind all the ingredients with 1 or 2 tsp of water if required. Adjust salt. It should be spicy.

Keep your date -tamarind chutney ready.

For filling

Mash potatoes and chickpeas (or dry peas) with salt . Mix thoroughly and prepare little balls and press them at the centre(small cutlets). Make sure they are smaller than papdi.

To serve

Arrange all 5 papdis in a flat plate. Place potato-chickpea cutlet on each papri.

Pour a tsp of green mint chutney. Then pour  a tsp date tamarind chutney. Sprinkle some onions, tomato, chopped coriander and sev. Serve immediately.
