Eggs are my favourite. But when I don’t find anything in refrigerator, this is my ultimate saviour. Simple spices and some chopping and you get a healthy and tasty curry!
Serves 2 persons
2 hard boiled eggs( boil eggs in water for 8-9 minutes)
4 chopped Tomatoes
1 medium sized onion (chopped)
5 garlic cloves(finely chopped)
1 tsp cumin powder
1 tsp dry coriander powder
1 tsp red chilly powder
1/4 tsp turmeric powder
1 tsp sugar
1/2 tsp cumin
1 tsp cashewnut paste(optional)
11/2 tbsp butter
1/4 tsp asafoetida (hing)
- Heat butter in a pan. Add cumin(jeera) ,chopped garlic, asafoetida to the pan. Saute it for around 30 seconds. Then add chopped onions with pinch of salt in it. Saute till onions are soft.
- Add chopped tomatoes and sugar in it. Allow it to cook till tomatoes are soft. It will take around 5 minutes.
- Add all dry spices turmeric powder, chilly powder, cumin powder, coriander powder. Mix it. Add half a cup of water. Add salt. Cook for 2-3 minutes with closed lid.
- Add cashewnut paste and mix properly. Cut the boiled egg in two equal sizes. Put them tomato gravy and serve hot with steamed rice.
