I feel like am writing rice mania! Cant get enough of rice though. If you have kids at home, i bet you can not just go wrong with paneer peas pilaf. It fits into all my categories quick ,easy and healthy. Pulao(pilaf) in India is rice-based main dish. Rice is combined with vegetables or meat or nuts or fruits and some spices. It is normally served with raita. Raita is yogurt based salad. It is usually healthy. This one is complete dish and perfect for lunch! It is very easy to prepare..
Cook rice, boil peas and good to go!
Serve with your favorite raita or salad! I serve it with cool cucumber raita(yogurt based salad)
Feeds 2 persons
For paneer peas pulao
1 bowl cooked rice
1 cup boiled peas
1 cup paneer (cut into cubes)
2-3 tbsp sesame seeds
3 green chillies(slit at the centre)
1 cardamom, 1 cinamon stick, 3 peppercorns, 1 bayleaf
1/2 tsp cumin seeds
1 tbsp ghee(indian clarified butter) or butter
- Boil peas with little salt and then immerse in cold water to retain its green colour.
- Heat oil and butter in pan. Put cashewnuts and raisins Put cumin, ginger paste, bay leaf ,cinnamon,peppercorns, cardamom and green chillies. Saute for a minute.
- Add sesame seeds. Saute for a minute. Add boiled peas and paneer and salt. Closed the pan and cook for a minute.
- Add cooked rice and mix properly. serve hot with salad and raita.
For cucumber raita( cool cucumber and yogurt salad)
1 bowl chopped cucumber
2 tbsp chopped coriander leaves
1 bowl yogurt(prefer low fat)
1/2 tsp sugar
pinch of red chilly powder
1/2 tsp roasted cumin powder
1/4 tsp dry mango powder (aamchur)
Mix all the ingredients in a bowl and refrigerate it for 10 minutes and serve with pilaf.
