The simple salad is always a good idea when not very hungry! But combination of ingredients are the soul for a fine salad. So, Please do use olive oil for the dressing of this salad (extra virgin olive oil will do). Salads are meant for having fresh. Some fruits really go well with salads.I have used sweet lime(mosambi) here. You can use seasonal fruits like pomegranate, pineapple, green grapes.
Serves 2 persons
1 cup boiled sweetcorn kernels
1 cup cucumber (cut in almost sweetcorn kernel size)
1 cup tomato(cut in equal size of cucumber approx)
1/2 cup sweet lime (remove the outer layer and just break into smaller pieces)
1/2 tsp sugar(optional)
11/2 tbsp olive oil
1/2 tsp pepper powder
1/4 tsp red chilly flakes
3 garlic pods (grated)
little lime juice
1/4 tsp chaat masala
- Cut cucumber, tomato and sweet lime almost of equal sizes and sugar to it and keep aside. The idea behind cutting in equal is that they should even and nice.
- For dressing ,in a small bowl, take olive oil and all the dressing ingredients. Mix with a spoon. Pour it into salad. Add sweetcorn. Mix gently. Refrigerate it for 5-10 minutes.
- Serve immediately.
